Ginger Spice Cookies

Ingredients

  • ½ cup brown sugar
  • cup white sugar
  • ½ cup butter softened
  • 1 egg
  • 3 tbsp molasses
  • 1 ½ cup all-purpose flour
  • 1 tsp baking soda
  • 1 tsp fresh ginger minced
  • ½ tsp cinnamon
  • ¼ tsp cardamom
  • ½ tsp nutmeg
  • tsp clove
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ cup sugar set aside in a bowl

Instructions

  • Preheat oven to 350°
  • In a large bowl or stand mixer, cream together the butter and sugars until fluffy.
  • Add in the egg, molasses, and vanilla. Mix until combined.
  • Add the flour, baking soda, and spices. Mix until combined.
  • Refrigerate for 15-45 min.
  • Form 1 inch balls and roll in 1/4 cup sugar. Place cookies on a baking sheet.
  • Bake for 8-10 min or until the edges look dry.
  • Sprinkle with cinnamon and enjoy!
