Easy potato and leek soup

- 4 strips bacon
- 1 tbsp butter
- 3 leeks sliced
- 5 red potatoes diced
- 1 clove garlic minced
- 2 1/2 cups chicken stock
- 1 bay leaf
- 1 tsp thyme fresh
- salt and pepper
Cook bacon in medium sized pot until crisp
Add butter, leeks, potatoes, and garlic. Cook until until leeks are tender
Add chicken stock and bay leaf
Simmer until potatoes are fully cooked
Blend with an immersion blender
Add thyme. Salt and pepper to taste
